For jpeg's I tend to use photograph ratio (to ensure it meets the minimum size dimensions)
When using Illustrator it varies considerably with some being square and others landscape layout.
If you look at other portfolio jpeg conversions of Illustrator files you can get an idea of the size used.

Yes A4 in landscape or portrait within Illustrator is fine. I use this sometimes as it gives me a jpeg conversion of 3509 x 2480 pixels straight from Illustrator. If you scale this down proportionatly you get 1024 x 724 which just happens to be very close to the most popular screen resolution.
Of course, not everyone uses Illustrator all the time (me included). Some illustrations I do partially or completely in Photoshop. For this I would grab an old photo as a basis for size and as a template. I already know that this meets with the minimum SS size dimensions because I have submitted photos in the past. My old D70 chucked out 3008 x 2000. I would grab an old image, fill it with white and draw away.
Of course, later versions of photoshop have custom presets so that its possible to create a new A4 document straight off.
However, I still use an older version of photoshop (5.5) for some of my illustrations because I prefer it and have got many filters and actions that I haven't had much luck converting to CS.
Hope this makes sense,
